We decided to stay in St. George Thursday night so that is wasn't such a long drive. When we got to Vegas Friday we went to the Cowboy Christmas and found Trent & Kortnie. Jaylee wanted to ride the horse. We did our own thing for a while then met back up with them for a burger, then we got to watch the kids!!! We had a blast. We walked around the shopping area at the stratosphere for a while. All Jaylee wanted to do was "ride the movin' stairs" (the escalators) so we did that quite a bit. Olin really liked it too! Then we went to one of the shops and got some fuzzy dice, The kids had a blast with them.
They rode the pillows like horses.
Ryan worked on counting with Jaylee.
Ry put Olin's socks on his hands.. He thought is was so funny. There was a lot of this going on all night (Ryan teasing Olin.) He is going to make such a great dad ... someday! Saturday we did a lot of walking starting with our hotel. We never did swin and ride the slide through the shark tank. But there was a guy scuba diving in it to clean the glass. So i took a pic. We walked out to Fremont street to check it out. Pretty Boring! At least in the day time.

Working Man

My working man fixing some fence and putting up a new gate that i can actually open! Then i took a few pictures of the horses. This is also the day i tried to fly my kite ... unsuccessfully.

Going To Vegas

This weekend is the start of the National Finals rodeo. We are going to Vegas and not actually going to attend the rodeo but we plan to watch it on one of the casino big screens, and we get to watch my niece and nephew while my brother and his wife go to the rodeo!
We will be attending Cowboy Christmas. This year i can buy anything I want without having to worry about airport security thinking it is a weapon, since we are driving! LOL
And we are staying at the Golden Nugget. I hope it is fun, and not scary. I am pretty excited about the slide that goes through the shark tank!!!

Thanksgiving In Ferron

We had thanksgiving dinner at Ryan's uncle JC's house in Ferron. They have a family tradition of doing treasure hunts so Grandma sent us on a treasure hunt to find a treat. You all have to line up and sing the song which goes: "We're going on a treasure hunt, a treasure hunt, a treasure hunt. We're going on a treasure hunt to see what we can find."
Then we went to Ryan's brother Jory's house to visit and to a few family pictures.
For Thanksgiving i was assigned a pie and stuffing. I don't like pie so I have never made one so i was stressed out a little. But i decided to make an ice cream pie (if i was going to make one i wanted to eat it!) It turned out really yummy here is what i did if you are interested:
Step one
put oreos in a food processor to crush them. about 2 cups of finely crushed oreos was enough for one crust. then mix in 5 tsp melted butter. then just form a crust out of that. Freeze for an hour before filling with ice cream. (or if the store is not OUT OF the oreo pie crusts you could just buy one!
Step Two
.6 qts cookies & cream ice cream thawed mix in like 2 oz of cool whip and put ice cream in your pie crust. sprinked partially crushed oreos on top and refreeze.
It was pretty yummy and SUPER EASY! Enjoy.

Chicken Enchiladas

Mix and fill tortilla shells with:
1/2 pint sour cream
1 can cream of chicken soup
1/4 chopped white onion (or as much as you like)
1/2 small can diced green chillies
diced chicken as much as you like (i usually use Tyson boneless tenderloins about 6-8)
Mix and pour over top of filled tortillas:
1/2 pint sour cream
1 can cream of chicken soup
1/4 chopped white onion (or as much as you like)
1/2 small can diced green chillies
Cook @ 350 degrees for 3o min.

Update

I haven't had anything to really blog about in awhile even though we have had quite a bit going on.
We now have a camper to use. We will be sharing it with my Brother. So anyone who wants to go camping with us we love camping and..... I AM GETTING A NEW JOB so we will be able to go a lot more!!!
I will be going to work for the Farm Service Agency in Provo. My brother works in the Roosevelt office as a loan officer, he let me know about the opening, and I am ready for a change so I looked into it. I am pretty excited because what I love most about my job now is the customers that I work with. And i think i will be working with the same customers for the most part. It will be more involved in Agriculture which is what i am interested in. Also i won't have to work Saturdays anymore, and even will have some Fridays off. So I think it is really going to be a good change for me.
I will be working as a program technician. Which basically means I will be in charge of helping farmers will some of the government programs available to them.
Halloween was fun. we went to our wards trunk-or-treat and then to our friends Ferrin & Kellen Worwood's house for a yummy dinner, and some movies.
Last sunday we finally took the road over the mountain from Levan into Wales. It was a good ride. Not too bumpy or steep and didn't take long. Then we decided to go to Ephraim and surprise visit Jenna. except she was in church so we had to drive around and waste an hour while we waited for her to get out.
We have a few fun things coming up. We are going to Roosevelt on the 14th to hangout with Trent and the kids while Kortnie is running her Apron shop at the craft fair (SHE MAKES AWESOME APRONS IS ANYONE IS INTERESTED, CHECK OUT THE ANDERSON FAMILY BLOG IN MY FREINDS & FAMILY LINKS!) Hopefully I get to walk through the fair myself!
Then we are also going to vegas durning NFR!
